Swiss Chard Veggie Bowl with Curried Cashews

This is a great vegan recipe that has turmeric spice, cashews and Swiss chard. The perfect combination of flavors. Enjoy!

Ingredients Method Notes

Ingredients
  

Swiss Chard Veggie Bowl ingredients
  • 1 Small Onion chopped
  • 2-3 Cloves Garlic finely chopped & crushed
  • 2 Tbs Coconut oil
  • 1 Tbs Turmeric powder
  • 1 1/2 Cups Broccoli chopped
  • 1 Cup Mushrooms sliced
  • 2 Cups Swiss chard de-stemmed & tightly packed
  • 1 1/2 Cups Swiss chard stems chopped
  • 1-2 Tsp Tamarind sauce gluten-free soy sauce
  • To taste Salt & pepper
  • Pinch Crushed red pepper flakes
Curried Roasted Cashews
  • 1 1/2 Cups Raw cashews
  • 1/2 Tsp Ground coriander
  • 1/2 Tsp Ground cumin
  • 1/2 Tsp Turmeric powder
  • 1/2 Tsp Curry powder
  • pinch Sea salt
  • 1/2 Tsp Tamarind sauce optional, this adds a great flavor
  • 1/4 Tsp Crushed red pepper flakes
  • 1 Tbs Coconut oil

Method
 

Swiss Chard Veggie Bowl ingredients
  1. Gather your ingredients together.
  2. Chop the chard.
  3. In a deep skillet or wok, sauté your onions & garlic in coconut oil until fragrant.
  4. Once the onions have softened and have become translucent, add the turmeric, you will have a beautiful & vibrant yellow color.
  5. Add the chopped Swiss chard stems, mushrooms, broccoli and sprinkle a little bit of sea salt on top to help extract some of their juices.
  6. Add a little water to the pan and cover with a lid so the steam can cook the vegetables.
  7. Add the Swiss chard ribbons and tamarind sauce to your skillet and let it simmer uncovered for just a few minutes (5 max).
  8. Do not overcook your veggies.
  9. This whole process should take about 10-12 minutes maximum, the veggies should stay crisp and the Swiss chard leaves a vibrant green.
  10. Once the chard leaves have softened up a bit, remove your skillet from the heat and sprinkle some red hot pepper flakes & curried roasted cashews.
Curried Roasted Cashews
  1. Heat the oven to 350 degrees.
  2. Combine all of the spices together.
  3. Melt the coconut oil in a pan and add the mixed spices.
  4. Warm up the spices until fragrant (2-3 minutes) on a low heat.
  5. Place the cashews in a bowl and mix in the spices.
  6. Once all of the cashews are fully coated place them on a baking sheet covered with parchment paper.
  7. Bake for 10-12 minutes (shaking them once or twice to get them properly roasted on all sides).
  8. They will easily burn, so please be careful and keep an eye on them.
  9. Cool the cashews for a few minutes, and serve on top of the Swiss chard.

Notes

Make the curried nuts ahead of time, they also make a healthy snack.
