Chicken Sliders With Cole Slaw
This recipe is perfect for those last minute get gatherings; it is quick, hearty and full of flavor. You can make it as mild or spicy as you like. We think your guests will love it!
Ingredients
For the chicken
- 1 Chicken roasted, skinned and deboned
- 1/2 Cup Mayonnaise *
- 1/2 Cup Sour Cream
- 1/4 Cup Hot wing sauce more depending on your heat preference
- 2 Tbs Ranch dressing mix
For the coleslaw
- 1 – 2 Pound Cabbage thinly sliced
- 1 Cup Carrots shredded
- 2 Ears fresh corn kernels removed
- 1 Bunch Green onions
- 1/4 Cup Chives chopped
- 1 Red bell pepper seeded and diced
For the dressing
- 1/3 Cup Red wine vinegar
- 3 Tbs Honey
- 2 Tbs Whole grain mustard
- Zest and juice of 1 lime
- 1 Tsp Sweet chili sauce or Tabasco
- To taste Salt & pepper
- 1/3 cup Olive oil
For the sliders
- 8 Slider buns
Instructions
For the chicken
- Debone and shred the chicken.
- Whisk together the mayonnaise, sour cream, hot sauce and ranch dressing mix.
- Add the shredded chicken to the mayonnaise mixture and stir making sure to thoroughly mix the flavors together.
For the coleslaw
- Cut the cabbage into small slices and place in a large bowl.
- Shred the carrots and add to the cabbage.
- Dice the green onions, chives and bell peppers and add to the mixture.
- Remove the kernels from the corn and sauté in a pan for about 5 minutes on medium heat, then add to the cabbage mixture.
For the dressing
- Whisk together the dressing ingredients and pour over the cabbage and mix to fully combine the flavors.
- Put the cabbage into the refrigerator and let marinate for one hour.
For the sliders
- Put a heaping spoonful of chicken onto the slider bun.
- Put another heaping spoonful of cabbage onto the bun.
- Serve as an appetizer or as a main meal. Enjoy!
