Cauliflower Gluten Free Pizza Crust

Ingredients
For the crust:
- 1 Tsp Cooking oil
- 2½ Cups Cauliflower grated
- 1 Large Egg lightly beaten
- 1 Cup Mozzarella cheese shredded
- 2 Tbs Parmesan cheese grated
- To taste Salt & pepper
For the pizza
- 1/4 Cup Tomato sauce homemade or store bought
- 1/2 Cup Mozzarella cheese grated
- 1/3 Cup Grape tomatoes sliced in half
- 2 Cloves Garlic sliced
- ¼ Cup Fresh basil
- ¼ Tsp Crushed red pepper flakes
Instructions
For the crust:
- Gather your ingredients together.
- Heat oven to 425 degrees.
- Grate the cauliflower, we used a food processor.
- Put the cauliflower in a large bowl and cook in the microwave for 7-8 minutes, or until soft.
- Cool until you can handle.
- Mix together, the egg, mozzarella, Parmesan cheese, salt and pepper.
- Prepare a 10 inch pizza pan with cooking oil.
- Using your hands, pat out the crust.
- Bake for 10-15 minutes, until golden.
For the pizza
- While the crust is baking, cut the tomatoes, slice the garlic and cut the basil leaves.
- Top the pizza with the sauce, mozzarella, cherry tomatoes, basil, garlic, and red pepper flakes (if desired).
- Put back into the oven and bake until melted and bubbly, another 10-15 minutes. Enjoy!
