Cauliflower Gluten Free Pizza Crust

Ingredients
  

For the crust:
  • 1 Tsp Cooking oil
  • Cups Cauliflower grated
  • 1 Large Egg lightly beaten
  • 1 Cup Mozzarella cheese shredded
  • 2 Tbs Parmesan cheese grated
  • To taste Salt & pepper
For the pizza
  • 1/4 Cup Tomato sauce homemade or store bought
  • 1/2 Cup Mozzarella cheese grated
  • 1/3 Cup Grape tomatoes sliced in half
  • 2 Cloves Garlic sliced
  • ¼ Cup Fresh basil
  • ¼ Tsp Crushed red pepper flakes

Method
 

For the crust:
  1. Gather your ingredients together.
  2. Heat oven to 425 degrees.
  3. Grate the cauliflower, we used a food processor.
  4. Put the cauliflower in a large bowl and cook in the microwave for 7-8 minutes, or until soft.
  5. Cool until you can handle.
  6. Mix together, the egg, mozzarella, Parmesan cheese, salt and pepper.
  7. Prepare a 10 inch pizza pan with cooking oil.
  8. Using your hands, pat out the crust.
  9. Bake for 10-15 minutes, until golden.
For the pizza
  1. While the crust is baking, cut the tomatoes, slice the garlic and cut the basil leaves.
  2. Top the pizza with the sauce, mozzarella, cherry tomatoes, basil, garlic, and red pepper flakes (if desired).
  3. Put back into the oven and bake until melted and bubbly, another 10-15 minutes. Enjoy!
