Julienne Zucchini and Meatballs

Ingredients
For the meatballs:
- 1 Pound Grass fed ground beef
- 1/2 Cup Panko bread crumbs
- 1/4 Cup Milk
- 1/2 Tsp Salt
- 1 Tsp Worcestershire sauce
- 1/4 Tsp Freshly ground pepper
- 1 Small Onion finely chopped
- 1 Egg
For the sauce
- 3 Tbs Coconut oil
- 4 Cloves Garlic minced
- 1/2 Large Onion chopped
- 1 Tbs Fresh basil chopped
- 6-8 Large Tomatoes
- 1 Tbs Fresh oregano chopped
- To taste Salt & pepper
- Dash Crushed red pepper flakes optional
- 1/4 Cup Parmesan cheese
For the zucchini pasta
- 2 Large Zucchini’s julienned
Instructions
For the meatballs
- Mx all the ingredients together and place on a baking sheet coated with cooking oil and bake at 400 degrees F, for 25-30 minutes.
For the zucchini pasta
- While the meat balls are cooking wash and cut the zucchini.
- Using a julienne slicer julienne the zucchini.
For the sauce
- Heat up the oil in a large saucepan.
- Add the garlic and sauté for 3 minutes, add the remaining ingredients, except the zucchini and cook about 15 minutes.
- Add the zucchini and cook just until heated through, about 5 minutes.
- Serve with the meatballs and top with Parmesan cheese. Enjoy!
