About Green Kale
Kale is a form of cabbage. Green kale leaves have large frilly-edges, are dark green and feature long stems. You may also see it called “common curly kale.”
Selection
When shipped from the farm Lady Moon Farms kale is firm with crisp leaves. Green kale leaves will be a bright or deep green, with a fresh smell and never wilted or limp.
Storage
Remove excess moisture and store in the refrigerator in a loosely sealed plastic bag. To extend storage life, cut bottoms of stalks to expose fresh ends, and place in a heavy glass filled with water. Cover the kale and glass with a plastic bag.
Preparation
Before eating, wash your kale thoroughly. Remove tough stalks and central veins. Chop or tear the leaves for use in cooking. Mature kale is typically eaten cooked. It is quite versatile and can be boiled, steamed, sautéed, or mixed into soups and other dishes.
Nutrition
Kale is high in vitamin K, vitamin C and beta-carotene. It is a favorite among those who enjoy juicing because of its high chlorophyl content.
