Gather all your ingredients together.
Cut up tofu into small pieces.
Heat up the oil in a large skillet.
Add the tofu and salt and pepper to taste.
Cook on medium high until all the sides are brown and crunchy.
In a separate bowl, mix together; the peanut butter, sweet chili sauce, sriracha sauce and set aside.
In the lettuce leaf add the noodles, Tofu, carrots, onions, cilantro and cucumbers.
Top with the sauce, nuts and roll up and enjoy!
This also makes a nice salad mixing all the ingredients together
