Sharon's Beet Salad

Servings: 4 People

Ingredients
  

  • 1 Bunch Beets red and golden
  • 2 Tbs Olive oil or to taste
  • 2 Tbs Brown rice vinegar or to taste
  • 1 Bunch Arugula
  • 1/2 Cup Blue cheese
  • To Taste Salt & pepper

Method
 

  1. Gather your ingredients together.
  2. Boil the beets until tender then peel, quarter and slice.
  3. Sprinkle with olive oil and brown rice vinegar.
  4. Marinate for a few hours.
  5. Put the arugula into a large salad bowl.
  6. Top with beets and blue cheese.
  7. Salt and pepper to taste.
