Dandelion Salad with Blue Cheese and Tomato Dressing

This is a delicious recipe that is easy to make and a meal on its own.

Ingredients
  

Blue Cheese & Tomato Dressing
  • 1/4 Cup Blue cheese crumbled
  • 2 Tbs White wine vinegar
  • 2 Tsp Maple syrup
  • 1/4 Cup Extra-virgin olive oil
  • 2 Large Tomatoes
  • 1/2 Tsp Salt
  • 2 Tbs Fresh tarragon chopped
  • To taste Freshly ground pepper
Salad
  • 4 Ounces Small pasta shells
  • 2 Slices Bacon
  • 1/4 Cup Blue cheese crumbled
  • 1/2 Red onion diced
  • 2 Cups Dandelion greens
  • 2 Cups Spinach

Method
 

To prepare the Blue Cheese & Tomato Dressing
  1. Combine blue cheese, vinegar, maple syrup, oil, tomatoes, salt, pepper and tarragon in a blender and blend until combined.
To prepare salad
  1. Bring a large saucepan of water to a boil and cook the pasta according to the package directions.
  2. Drain, rinse with cold water and set aside.
  3. Cook bacon in a large skillet over medium heat until crisp, about 4 minutes.
  4. Remove the bacon and add the red onion and sauté for 5 minutes.
  5. When the bacon is cooled chop into small pieces.
  6. Add the spinach to a salad bowl.
  7. Add the dandelions and pasta shells.
  8. Add the blue cheese, onion to the mix.
  9. Toss the salad.
  10. Serve with the Blue Cheese & Tomato Dressing.
