Julienne Zucchini and Meatballs

For the meatballs:

  • 1 Pound Grass fed ground beef
  • 1/2 Cup Panko bread crumbs
  • 1/4 Cup Milk
  • 1/2 Tsp Salt
  • 1 Tsp Worcestershire sauce
  • 1/4 Tsp Freshly ground pepper
  • 1 Small Onion finely chopped
  • 1 Egg

For the sauce

  • 3 Tbs Coconut oil
  • 4 Cloves Garlic minced
  • 1/2 Large Onion chopped
  • 1 Tbs Fresh basil chopped
  • 6-8 Large Tomatoes
  • 1 Tbs Fresh oregano chopped
  • To taste Salt & pepper
  • Dash Crushed red pepper flakes optional
  • 1/4 Cup Parmesan cheese

For the zucchini pasta

  • 2 Large Zucchini's julienned


For the meatballs

  • Mx all the ingredients together and place on a baking sheet coated with cooking oil and bake at 400 degrees F, for 25-30 minutes.

For the zucchini pasta

  • While the meat balls are cooking wash and cut the zucchini.
  • Using a julienne slicer julienne the zucchini.

For the sauce

  • Heat up the oil in a large saucepan.
  • Add the garlic and sauté for 3 minutes, add the remaining ingredients, except the zucchini and cook about 15 minutes.
  • Add the zucchini and cook just until heated through, about 5 minutes.
  • Serve with the meatballs and top with Parmesan cheese. Enjoy!
