Sunchoke Salad With Orange Zest

Here is one vegan salad dish that is simple and delicious. Sun chokes (also known as Jerusalem artichokes), are a root vegetable, the plant looks similar to a sunflower growing a tasty root that can be used in many dishes. The root resembles ginger root, but has a sweet nutty flavor that might be compared to water chestnuts. Sunchokes are not widely used but are rich in inulin, a carbohydrate linked with good intestinal heath.

Ingredients
  

For the salad
  • 1 Pound Firm sunchokes scrubbed clean
  • 1/3 Cups Fresh flat-leaf parsley coarsely chopped
  • 2 Cups Mixed greens
  • 1/4 Cup Walnuts toasted and finely chopped (optional)
  • 2 Tbs Orange zest
  • To taste Sea salt
For the dressing
  • 2 Ounces Vegetable oil
  • 1 Ounces White wine vinegar
  • 1 Tbs Fresh local honey
  • The juice of 1/2 an orange
  • To taste Salt & pepper

Method
 

For the salad
  1. Thinly shave the sunchokes with a mandoline, vegetable slicer, or food processor (if you have a thin slicer attachment).
  2. Chop the parsley.
  3. Mix in the parsley, greens, walnuts, orange zest and salt & pepper.
For the dressing
  1. Combine all the dressing ingredients and shake to mix.
  2. A wonderfully different dish, enjoy!
