Chicken Sliders With Cole Slaw

This recipe is perfect for those last minute get gatherings; it is quick, hearty and full of flavor. You can make it as mild or spicy as you like. We think your guests will love it!

Ingredients
  

For the chicken

  • 1 Chicken roasted, skinned and deboned
  • 1/2 Cup Mayonnaise *
  • 1/2 Cup Sour Cream
  • 1/4 Cup Hot wing sauce more depending on your heat preference
  • 2 Tbs Ranch dressing mix

For the coleslaw

  • 1 - 2 Pound Cabbage thinly sliced
  • 1 Cup Carrots shredded
  • 2 Ears fresh corn kernels removed
  • 1 Bunch Green onions
  • 1/4 Cup Chives chopped
  • 1 Red bell pepper seeded and diced

For the dressing

  • 1/3 Cup Red wine vinegar
  • 3 Tbs Honey
  • 2 Tbs Whole grain mustard
  • Zest and juice of 1 lime
  • 1 Tsp Sweet chili sauce or Tabasco
  • To taste Salt & pepper
  • 1/3 cup Olive oil

For the sliders

  • 8 Slider buns

Instructions
 

For the chicken

  • Debone and shred the chicken.
  • Whisk together the mayonnaise, sour cream, hot sauce and ranch dressing mix.
  • Add the shredded chicken to the mayonnaise mixture and stir making sure to thoroughly mix the flavors together.

For the coleslaw

  • Cut the cabbage into small slices and place in a large bowl.
  • Shred the carrots and add to the cabbage.
  • Dice the green onions, chives and bell peppers and add to the mixture.
  • Remove the kernels from the corn and sauté in a pan for about 5 minutes on medium heat, then add to the cabbage mixture.

For the dressing

  • Whisk together the dressing ingredients and pour over the cabbage and mix to fully combine the flavors.
  • Put the cabbage into the refrigerator and let marinate for one hour.

For the sliders

  • Put a heaping spoonful of chicken onto the slider bun.
  • Put another heaping spoonful of cabbage onto the bun.
  • Serve as an appetizer or as a main meal. Enjoy!
